Those trusty 10 cent bags of Ramen noodles. They have seen many a college student or others on a budget get through-without costing a lot of dough.

Still, they can get pretty old pretty fast. That is, unless you find some creative ways to dress them up and even turn them into health food!

Below are some recipe ideas that are so good, you might even want to serve them to your mom:

Shrimp Ramen Stir-Fry Pan Noodles

The beauty thing about this one is that a version of this dish is actually served in Asian restaurants. You may not even know you're eating Ramen.

Cook a shrimp flavored packet of noodles as usual for two minutes or however long it takes for them to be done. Drain and set aside. Stir-fry 8-10 thawed, medium size or large shrimp in olive oil, until tender, adding seasonings of your choice, and ½ to ¾ of the shrimp Ramen flavor packet.

Some seasonings I've tried are curry, garlic and sea salt, plus chives for a little additional flavor and to add color to the dish.

Add a couple vegetables of your choice, such as julienned red pepper-either bell pepper, or for those with more adventurous taste buds, a cayenne pepper. I have also used bean sprouts, water chestnuts, and bok choy. Stir-fry the vegetables until tender crisp, and coated with seasonings.

Add the drained ramen noodles. Mix together the entire mixture until everything is coated with oil and seasonings, and ‘fried,' which basically means, looking like take-out Chinese fried rice or noodles-a little browned, but only just barely.

Simple ‘Gourmet' Pork Ramen Noodle Soup

This is a very simple variation on the traditional Ramen soup, but just these little additives make a great deal of difference.

Cook the pork Ramen as usual. Drain enough water off so that you have enough for a personal bowl of soup, or two bowls-whatever you intend. While the water is still hot, add a tablespoon or so of extra virgin olive oil (yeah, EVOO) and stir, plus the pork Ramen packet (pork Ramen flavoring is close to their best-rich in flavor and not artificial). Use ½ or ¾ of the packet if you want to cut down on sodium.

Add fresh chopped chives or, alternately, dried chives to the soup. You will be surprised at how good this is. The olive oil and chives add just the right alteration of taste, and make for a great, light bowl of noodle soup.

Chicken Side Dish Noodles

Cook a chicken flavored Ramen noodle pack as usual and drain. In a separate stir-fry pan, cook up some vegetables of your choice. Some good choices for this dish include small florets of broccoli, cauliflower; small slices of carrots cut diagonally, and diced mushrooms. Use olive oil again, or a healthy cooking oil of your choice. Add your spices. Good choices for this can be rosemary, basil, oregano, parsley, Italian seasoning mix, or Mrs. Dash's.

Stir in ½ to a full packet of the chicken Ramen seasoning mix, coating the vegetables. When they are tender, add the Ramen, and stir everything until it is all covered in the seasoning.

Serve alongside baked or grilled chicken breast for a full course dinner, all food groups represented!

Hilarious! You've given hope for tons of poor college kids with a burning culinary ember. ;-)

Unfortunately, ramen noodles are extremely unhealthy, particularly because most are fried with hydrogenated trans fats (which make them shelf-stable). Hopefully they'll reformulate, but in order to be cheap, they have to be shelf-stable, which means hydrogenated oils...

Are you sure about the trans fats, tho? I thought those were banned from everything. I'm going to check that out.

Trans fats are usually banned from restaurants in the municipalities they're banned in (New York City, etc). There's definitely no national ban.

Another big source? Donuts. Fried in shortening, which is basically partially hydrogenated oil.

OK, so it is more nefarious than what I thought. I'm a big package reader, and according to the Ramen package, there are 0 grams Transfats. But I did research on it on the net, and as it turns out, they are able to say that if it is under a certain percentage of partially hydrogenated oil per SERVING. So an item may still contain trans fats even if it isn't so labeled.

Some sites on the internet claim the manufacturer has removed trans fats from Ramen, tho. ??

Well, I always knew they weren't the healthiest, but as long as you are stuck eating them, might as well make them better.

Oh man, I'm a ramen fanatic. thanks for the ideas, my wife always complains whenever I start opening a package. I'll show her....

I don't really care that they are unhealthy, as they are a soupish and easy to digest, I think it makes it easier on your body to ....process, to transport that fat.

One more ingredient to add to all dishes..Tabasco.

:), Goldentoad... Tabasco must be an Arizona thing. Have you tried the Lime and Chile Ramens?

And I think you are right, frankly. This is the research on trans fats, as usual, how it stands now--but it is all about how all the elements of food react together and we may not have the full story even yet. And Ramen aren't covered in trans fats, like certain restaurant fries or donuts--the percentage is small, or they wouldn't be able to label them as they do at all.

Lita: Yeah, a lot of products say "trans fat free!" now but that's because it has less than 1g of trans fat per serving. All you have to do is shrink the serving size! I think it's dishonest. At any rate, if you every see "hydrogenated" on a label, it's a sign it's not good for you.

Hoping they reformulate somehow to not include trans fats (or esterified fats, which are technically not trans, but apparently not good for you, either), but given the typical consumer of these products (poor students!) I don't imagine there will be much pressure for that anytime soon!

I am going to try the Shrimp Ramen dish. (Shimp flavor is the one I voted for, under "other") Although Ramen with scrambled eggs on top is one of our "house specialties", my husband is going to crack up when he sees the receipt: $12 for a frozen bag of shrimp... $5.98 for the economy box of Ramen Noodles. =)

I clicked on a google link on this hub, the link is called "Top Ramen" and it had a white baby onesie with a picture of a bowl of ramen noodles and on the top of the onesie it says .. "Powered By...". LOL!

Well! Andromeda, it is all about the dollar cost averaging, you know....at least for me (regarding the shrimp). And you can score a bag 'o shrimp for $7 if you play your cards right. And it beats Big Macs (yuk, anyway!) Thanks for stopping in.

Love the romen noddles, easy and 2 minutes to cook. I usually try adding vegetables to make it more interesting. Its also very inexpensive and can stretch the dollar really far.
