A healthy and delicious Asian Salad Recipe
Ingredients:
- 1 large barbequed chicken
- ½ small Chinese cabbage, finely shredded
- 1 medium red bell pepper, thinly sliced
- 1 small carrot, grated
- 1/3 cup loosely packed coriander leaves
- 1/3 cup loosely packed parsley leaves
- 2 springs onions, thinly sliced
Dressing
- 2 tbsp fish sauce
- 1 tbsp caster sugar
- 1 tbsp lime juice or lemon juice
- 1 clove garlic, crushed
- 1 small fresh red chilli, finely chopped
- 2 tbsp soy sauce
- 1 tsp finely grated fresh ginger
Procedure:
- Remove and discard the skin and bones from the chicken; coarsely shred chicken meat.
- To make the dressing. Combine all ingredients in a large salad bowl. Drizzle with Dressing; toss gently to combine.
Makes 4 servings.
