A healthy and delicious Asian Salad Recipe

Ingredients:

  • 1 large barbequed chicken
  • ½ small Chinese cabbage, finely shredded
  • 1 medium red bell pepper, thinly sliced
  • 1 small carrot, grated
  • 1/3 cup loosely packed coriander leaves
  • 1/3 cup loosely packed parsley leaves
  • 2 springs onions, thinly sliced

Dressing

  • 2 tbsp fish sauce
  • 1 tbsp caster sugar
  • 1 tbsp lime juice or lemon juice
  • 1 clove garlic, crushed
  • 1 small fresh red chilli, finely chopped
  • 2 tbsp soy sauce
  • 1 tsp finely grated fresh ginger

Procedure:

  1. Remove and discard the skin and bones from the chicken; coarsely shred chicken meat.
  2. To make the dressing. Combine all ingredients in a large salad bowl. Drizzle with Dressing; toss gently to combine.

Makes 4 servings.
