Durum wheat is preferred by most for whipping up pasta dishes. It has greater protein but it is not suited for those with gluten intolerance. Some people recommend buckwheat soba noodles as an alternative to wheat-based pasta.

Unless consumers check if it is 100 percent buckwheat, though, gluten intolerants may suffer from hidden flour content like wheat.
