Healthy Quick Meals for People Who Hate to Cook

Are you a busy person who likes to eat healthy, but who hates to cook? If you are like so many other people, you just grab something quick on your way home from work and toss it into the microwave for dinner. It’s so easy to do that when you are a busy career-person. But this is not a very healthy lifestyle. If you would like some quick meal ideas that are healthy, then here are some to try (and you won’t spend much time in the kitchen):




Mexican Chicken

One of the easiest healthy meals to make on a busy weeknight uses three simple ingredients: Boneless chicken breasts, a jar or organic salsa and some low fat cheese. You simply wash the boneless chicken breasts; lay them side-by-side into a baking dish. Then cover the chicken breasts with an entire jar of your favorite organic salsa (any flavor will do) and then sprinkle cheese generously over the top. Cover dish with a piece of aluminum foil to seal in juices and bake in a 350 degree oven for 30-40 minutes. The chicken comes out very juicy, with a lovely taste and this can be served over brown rice or wheat pasta or just enjoy dipping low fat tortilla chips into the sauce and some low fat sour cream on your plate.


Turkey Chili

If you hate to cook, chances are you probably already own a crockpot. Turkey chili is so good when cooked in a crockpot, but this meal can also be made on the stove top and it’s just as good. Simply brown one pound of ground turkey and then top with a can of crushed tomatoes, a can of red kidney beans, a can of pinto beans and a cup of chopped onions and green or red peppers. Sprinkle a generous amount of chili power and let this simmer over a low heat for at least 40 minutes before serving. Great with cornbread or low fat Monterey jack cheese as well.



Pasta and Tomato Pesto Sauce

This is a super simple and quick healthy dinner idea for the person who hates to cook. Boil a package of whole wheat pasta, drain and rinse when cooked, and then stir in a can of organic stewed diced tomatoes and a half a jar of pesto. Add your favorite grated cheese like parmesan and a dash of oregano or Italian seasoning to give it even more flavor. This is a light meal that takes less than 20 minutes to prepare. Lovely if served with a fresh salad or garlic breadsticks on the side.

So you see, it doesn’t take much effort or time at all to cook a quick healthy meal.
