Caprese Panini Recipe for your George Foreman Grill

Don't have an expensive Panini grill? No problem! Use your George Foreman Indoor Grill instead!

Caprese Paninis for two

  • 1 tomato
  • About ½ cup Fresh basil leaves
  • 2 slices of part-skim mozzarella cheese OR 1/2 cup shredded part-skim mozzarella cheese, divided
  • Salt
  • Pepper
  • Olive oil
  • Balsamic vinegar
  • 4 slices of whole wheat or whole grain bread
  1. Heat your George Foreman Grill to 400 degrees.
  2. Tear basil leaves into bite size pieces. Slice tomato into ¼" slices. Set both ingredients aside.
  3. Lightly brush one side of each slice of bread with olive oil. On that same side, start layering your ingredients: Mozzarella cheese, tomato slices, basil. Sprinkle with salt and pepper to taste. Lightly drizzle with balsamic vinegar. Top with other slice of bread (olive oil side down).
  4. Once the grill is heated, spray with cooking spray. Add sandwiches. Close lid and grill for 4-5 minutes.

Variation: add grilled and sliced boneless, skinless chicken breast.
