Caprese Paninis for two
- 1 tomato
- About ½ cup Fresh basil leaves
- 2 slices of part-skim mozzarella cheese OR 1/2 cup shredded part-skim mozzarella cheese, divided
- Salt
- Pepper
- Olive oil
- Balsamic vinegar
- 4 slices of whole wheat or whole grain bread
- Heat your George Foreman Grill to 400 degrees.
- Tear basil leaves into bite size pieces. Slice tomato into ¼" slices. Set both ingredients aside.
- Lightly brush one side of each slice of bread with olive oil. On that same side, start layering your ingredients: Mozzarella cheese, tomato slices, basil. Sprinkle with salt and pepper to taste. Lightly drizzle with balsamic vinegar. Top with other slice of bread (olive oil side down).
- Once the grill is heated, spray with cooking spray. Add sandwiches. Close lid and grill for 4-5 minutes.
Variation: add grilled and sliced boneless, skinless chicken breast.
