This is my own recipe, thought up and used in a local pizza shop as meatloaf and meatballs for subs. Prepping before mixing makes it all so much easier and fun. You want to pre-heat your oven to 350*
*Gather the following ingredients to prepare and mix:
~3 Brown or white eggs (stirred up into large mixing bowl)
~2 bell peppers (you can mix colors if you wish to add to the appeal) These should be chopped finely or to your own liking.
~One large sweet onion diced
*Throw all of the above ingredients into the bowl with the eggs.
*Add 1 tsp. of Janes Crazy Mixed Up Salt, and 1 tlbs of sweet basil:
~1 cup of parmesan cheese thrown in
~ One 4 oz. can of tomato paste
~ One 16 ounce can of stewed tomatoes (squeeze with your fingers as you add)
~ 2 sleeves of crushed ritz crackers
Mix all very well together.
* Now we add 3 lbs. of ground beef and 1 lb. of sage sausage
* I use my hands to mix all the final ingredients together
One pound small mini loafs are very popular in our house, so I grease a large cake pan and begin loading the loafs into it.
* My next favorite part of the recipe comes now, once the pan is full, squirt squiggly line with ketchup all over the tops of the mini loaves, and then sprinkle with more parmesan cheese.
*Bake the loaves @ 350* for 30 minutes, and then turn your heat up to 425* and bake for another 15 minutes.
The loaves will seem a little runnier than what a normal sized loaf might feel like when you are preparing one. But believe me, they hold together well and are mouthwatering moist.
This recipe will yield ( 2) 9X13 cake pans.
We love to do it this way and foil wrap the remaining cooled mini loafs and put them into zip-lock baggies to be put into the freezer. This way the girls can pull a single mini loaf out of the freezer and pop it into the microwave for a sandwich or just by itself.

As mentioned before, this recipe can be use to make delicious meatballs also. Just roll them into your desired size, but top only with parmesan cheese when baking.

I was so hoping that someone would try out this recipe and let me know if they like it.
I have surgery coming up and will be making a large batch of this to put into the freezer for the kids while I'm down.
