Herbed Tomato Juice

(non-alcoholic drink)
Ingredients :
- 3 lbs (1.5 kg) tomatoes
- ½ cup (125 ml) water
- 1 onion, sliced
- 1 stick celery, sliced
- 4 sprigs basil or 1 tsp (5 ml) dried basil
- 3 sprigs parsley
- ½ bay leaf
- pinch salt
- pinch paprika
- dash Worcestershire sauce
- 1 tsp (5 ml) sherry
- lemon juice
Procedure :
- Put the tomatoes into a pan with the water, onion, celery and herbs.
- Simmer until the tomatoes have broken up. Strain, then season to taste with salt, paprika, Worcestershire sauce, sherry and a dash of lemon juice.
- Pour into a glass and chill before serving.
Makes approximately 4 cups (1 L)
