Nothin' Says Lovin' Like Sweet Potato Muffin
Can you believe the holidays are not far away? I love searching for new recipes, especially something healthy. All the great smells of cinnamon, breads, buttery vanilla coffee cakes, chocolatey cookies and cakes, pumpkin and pecan pies. Ouch! My hips get bigger just thinking about the gooey sweets that make their way into my body all by themselves. Yeah, right.
As I've gotten older, I've searched for healthier ways to satisfy sweet cravings that accompany the holiday time. This recipe is a delicious way to guilt free eating. Indulge with butter flavored with ginger, which is very healthy (ginger, not the butter) and add a hot cup of joe or green tea, and you've got sweet somethings on the table.
You can add shredded zucchini, blueberries, cherries, cranberries, or shredded carrots to enrich the texture. Creating your own version is always fun!
Ingredients:
1 1/2 c all purpose flour
1 c and 1 tbls sugar, divided; use Splenda for an even healthier version
1 tsp honey
3 tsp baking powder
3 tsp orange peel, grated
1 1/2 tsp ginger (makes it healthy and yummy)
1 tsp baking soda
dash salt (about 1/4 tsp)
2 eggs slightly beaten
1 c cold mashed sweet potatoes (prepared but not with butter or milk, just plain mashed - no yams)
1/4 tsp to 1/2 tsp cinnamon
Procedure:
- Combine flour, 1 c sugar, baking powder, orange peel, ginger, baking soda, salt.. Combine eggs and sweet potatoes and 1 tsp honey in seperate bowl, then add dry ingredients stirring just until moist.
- Fill greased or lined muffin cups almost to top. Combine cinnamon and remaining sugar; sprinkle on top of batter. You can mix cinnamon and sugar with a tsp or so of brown sugar for variation.
- Bake at 400F for 18 - 20 minutes, until toothpick comes out clean. Cool for 5 - 8 minutes before removing muffins. Top with Ginger Butter, below.
Ginger Butter:
1/2 c butter, softened
2 tbls finely chopped crystallized ginger. Whip together with a whisk. Spread on warm sliced muffins.
These are great with hot cocoa, hot tea, iced tea, coffee, ....you get the idea.
