The Chicken Clucks

Holiday eating is ahead and are we dreading the calories already? Don't despair, this is a low fat spread great on a triscuit. The new flavored low fat, high fiber Triscuits are so full of flavor! Ignore the slight texture of straw, and you'll never know it's healthy.

Grab the closest chicken, give her a quick shake, a hard pluck and a few minutes of heat, and the sharp knife to slice will never be felt by the little clucker.

Or you could just purchase:

  • 1 10 oz can of premium chunk white chicken in water. Do not drain.
  • 2 8 oz pkgs Healthy Choice fat-free cream cheese - softened.
  • 1/2 c fat free sour cream or yogurt if you prefer
  • 1 envelope dry onion soup mix
  • 1/4 c green or red pepper - chopped, optional

For a crowd, double or triple everything.

Procedure:

  1. Mix all ingredients with a hand mixer on low speed for about 2 minutes or until well mixed. Make sure you added the water from the canned chicken. You could certainly use fresh chopped chicken and chicken broth.
  2. Serve with crackers - Low Fat

Add hot sauce if you'd like, or red pepper flakes.

Kiss the cook, (hey, what about me??) it's that easy! Pucker UP!

Yes, pam, this one is for you!! and me!! LOL You're doing great! I know you probably don't have much time for walking; but it is crucial to keep you off any plateau you hit. I have always had success with walking. 20 - 30 min a day is good 45 min is better. Divide it in two sessions if you can, because it revs your system up twice that way.

OK end of lecture. LOL sorry....I'll be putting up lots of low fat tasty dishes, we had many that I re-vamped from Mom's diabetic diet. =0 Thanks for stopping by, as always!!
