Potato Brussels Sprouts recipe

For 4 to 6 servings:

8 to 10 baby Yukon gold potatoes (chopped into bite sized pieces)

1 diced onion (red or yellow)

2-3 Tbsp diced pancetta

2 cloves chopped garlic

your favorite herbs

8 to 10 Brussels sprouts (halved)

2-4 Tbsp extra virgin olive oil

3 Tbsp soy sauce and/or salt & pepper

Lemon juice (of half a lemon) (optional)

Put all of the ingredients in a stainless steel bowl and toss until everything is covered with olive oil and soy sauce. Add more oil if it looks dry. Some people like to add a little lemon juice at this point (your call). Sprinkle with salt and pepper if you like.

Line a baking dish or cookie sheet with foil. Dump all of the ingredients onto the dish or sheet.

Bake at 350 F for about 30-40 minutes. Serve immediately.
