Steamed Tilapia Recipe
This recipe for Steamed Tilapia has strong Vietnamese influences. And if you steam a whole tilapia or several if you are serving them to several people your fish will make a beautiful presentation. You will need a large bamboo steamer to cook this dish in.
You will be preparing two sauces for this fish. One that you will steam the fish in and one that you will ladle over each fish as you serve it. To prepare the marinade to steam the fish in just follow the below recipe.
First Marinade Goes On Before Steaming
1. 2 Cups of Soy Sauce.
2. 1 Cup Fish Sauce.
3. 2 Tablespoons Black Pepper.
4. 1 Tablespoon Sugar.
5. 1/3 Cup Chopped Chile Peppers.
6. 1/3 Cup Finely Diced Ginger.
7. 1/2 Cup of Vegetable Oil.
Mix all your ingredients together well and just before you pour it over your fish to steam it stir it up very well. Be sure to get some of the marinade inside the fish.
For the second marinade that you will be ladling over the fish before it is served follow the below recipe.
Second Marinade Goes On Second
1. 4 Tablespoons Soy Sauce.
2. 2 Tablespoons Fish Sauce.
3. 1 Tablespoon Sugar.
4. 1 Teaspoon Black Pepper.
5. 1 Tablespoon Lime Juice.
6. 3 Tablespoons Olive Oil.
7. Lemon Grass For Garnish.
When you get ready to steam your tiliapia stuff each tilapia with lemon grass , lemon slices, and chopped green onions. Ladle the first marinade over each fish when you get it in the steamer. Be sure some marinade gets inside the body cavity of each fish.
You want to steam your fish for about 10 minutes and check to be sure your fish is done and flakes easily. It should be well done in 10 minutes but check just to be sure. Place each steamed tilapia on to a serving plate or platter and then ladle the second marinade over it. Place the lemon grass on top as a garnish.

Grilled Shark Recipe
You will probably find shark being sold in the seafood section of your local supermarket. If you can't find shark go with tuna as this recipe makes it wonderful also.But do make the effort to find shark because it is quite simply delicious. I eat shark , fried , steamed , baked , broiled , and blackened and there's a few more ways I plan to try it. Buttermilk and soy sauce is perfect to soak shark in before you cook it. You'll find that it not only makes it tender but also makes the shark much milder.
Okay once you have your Shark Steaks place them in a plastic pan that has a lid. Pour buttermilk in to cover your shark steaks and then add a cup of soy sauce. Marinade in the refrigerator for 12-24 hours.
Meantime you can make the below cooking sauce for your shark steaks.
1. 1/2 Cup Dijon Mustard.
2. 1/2 Cup Honey.
3. 1 Tablespoon Lemon Juice.
4. 1 Tablespoon Ground Cayenne Pepper.
Mix your ingredients in the food processor or blender and mix very well. After your shark has been in the refrigerator for 12-24 hours take it out and wash your shark well with cold running water.
Now dip each shark fillet in the cooking sauce being sure to coat each shark fillet well and then place on a hot grill being sure to turn often and cook for 7-10 minutes. Check that's its done by trying to flake with a fork. If it flakes easy its done. If not cook a few more minutes on each side. You can serve additional sauce on the table if you want.

Fried Shark Recipe
You can soak your shark in buttermilk and soy sauce and then wash it off and deep fry it in small 2"X2" cubes.
Now you will want to mix 2 cups of milk with 3 large eggs. Be sure to beat it very well with a wire whisk or mix it in a blender for better results.
Now mix 2 cups Flour , 1 Teaspoon Lemon Pepper , and 1 Teaspoon Paprika and mix well.
Dip your shark first into the milk and egg mixture and then into the dry mixture. Do this twice so that you end up double breading your shark. Deep fry in a 350 degree preheated deep fryer. Shark fried this way is so delicious. For a extra tasty treat serve with malt vinegar on the side.
You can use catfish fillets or nuggets and follow the recipe for the deep fried shark with them. Catfish prepared and cooked this way is very delicious also.
