How to Make Awesome Vegetarian Spring Rolls

Ingredients:

Dried rice paper circles

Lettuce

Your choice of basil/cilantro/mint

Shredded carrots

Sprouts

Cooked vermicelli noodles

Peanut Dressing (or other favorite dressing/dip sauce)

1. Boil a large pot of water, turn off heat and keep covered.

2. Dip the rice paper into the hot water for a few seconds.

3. Place on cutting board or plate.

4. On one end of the rice paper stack the ingredients, then roll and tuck the rice paper.

5. Wrap in plastic to keep fresh or eat right away.
