How To Make Cookie Ice Cream

Gorgeous Easy Summer Time Recipe - Cookie Ice Cream
You will need:
A large bowl.
A tub of good quality vanilla ice cream - 500ml.
75g sultanas
3 tbspns dark rum
75 g soft almond cookies.
Take your large bowl and put into freezer for 10 minutes. Then you put a 500ml carton of good quality, vanilla ice cream into the fridge to soften - again for 10 minutes.
While ice cream is softening take 75g. (3oz) of sultanas and place in a pan to which you have added 3tbspn dark rum and heat gently for 2 minutes until sultanas are plump.
Spoon ice cream into your frozen bowl and working quickly break up ice cream into rough chunks - use a masher or a fork to do this.
Stir in the sultanas and 75g. (3oz) crumbled soft almond cookies.
Spoon the ice cream mix back into your bowl and re-freeze. for 20 minutes or until firm.
Serve with a raspberry coulis - if you wish.

You could tell the ice cream in a bag lady is a teacher, her handwriting is so perfect! I have really always wanted to know how to make cupcake cones, I've seen them before, in a magazine I think. Your recipe is scruptious and so easy to make. I did not know that chrystalization makes bad icing. Montgomery is hysterical. Oh my this is soooo all about ice cream. and coulis. I'm going straight for dessert tonight!

Nothing like summer here but this looks delishso will make it anyway.... No time of year that i wouldn't occassionally eat ice Cream.....Its Freezing in New Zealand @ the moment, makes u feel awful, fires all roaring.
thanks mandy beau - I am a bit of a fan of ice cream most of the time also but I saw on TV how cold it is NZ at the moment so keep those home fires burning...cheers

thanks nazishnasim - not a wonderful idea to to try and eat the hardware - all dust and no substance - but for the actual eating of substance you should try and make it this summer - although i suppose that you can eat ice cream anytime at all, at all! cheers

Raspberry Coulis
You will need
sugar syrup - sugar and water
1 punnet of raspberries
balsamic vinegar
To make sugar syrup
heat equal amounts of sugar and water until sugar is disolved. (I often use brown sugar rather than white as it seems to give it a richer flavour).
For i punnet of raspberries, 1/4 cup of each should suffice.
If you are a fan of balsamic vinegar - you can put a dash of this into the mixture before blending - some people may prefer not to add this to the sugar syrup.
Put the sugar syrup and raspberries into a blender and puree until liquid - serve with your ice-cream.
