How To Make Homemade Scrapple

Homemade scrapple is made from lean pork, spices, and cornmeal. Homemade scrapple is easy to cook and the spices can be altered to suit your family's tastes.
Ingredients
- 1 1/2 lbs. boneless pork
- 2 tsp. salt
- 1 cup cornmeal
- 1/2 tsp. pepper
- 1/2 tsp. sage
- lard or bacon drippings
Directions
- Put the boneless pork in a stock pot. Cover completely with water. Add the salt to the water.
- Bring water to a boil and then immediately reduce the heat to low. Cover and simmer until tender, about 2 1/2 hours.
- Remove meat to cutting board. Reserve 3 cups of the stock in the pan.
- Shred the meat. Add the meat to the 3 cups of stock in pan.
- Bring to a boil. Add the cornmeal a little at a time and stir until blended.
- After all of the cornmeal is blended with the pork, add the pepper and sage. Stir thoroughly.
- Grease a loaf pan. Pour meat-cornmeal mixture into the loaf pan and refrigerate for about an hour. Be careful as meat will be hot.
- After scrapple is completely chilled, cut into slices and pan fry until crispy brown on both sides. To add additional flavor, pan fry using lard or bacon drippings. (Lard can be purchased in the grocery store, usually on the baking aisle or in the same area as the vegetable shortening.) Serve with homemade stewed tomatoes and mashed potatoes for an old-time Philadelphia supper.
