How To Prepare "Healthy" & "Delicious" Small Kitchen/Galley Cuisine

It just occurred to me that it's that glorious time of the year again. It's college time. Those new and returning students embark on their journey in the universe as adults who will be, our future. I have been to 3 colleges myself and I still get enlightened by all the things I learned about people and life during those years. People made me feel special back then and told me I could do anything I wanted to to. To this day, I firmly believe they meant that from the bottom of their hearts.


As my future leaders get ready to journey through the school year I want to remind and prepare them for what most of them will neglect during this period, proper diet. Believe me, just because you're on a budget or don't have much cash, it doesn't mean you can't enjoy healthy and delicious meals during your "dorm tenure".


Of course you know you must have the proper tools such as the microwave, micro-fridge and George Foreman grill. But even if you don't have it I'm certain that you can make friends who have them and with your knowledge of great college cuisine, they'll probably give you carte blanc to their cooking resources.


Speaking of resources, be resourceful in your culinary adventures at your school. Find those juniors and seniors and have them share their experiences with you. Keep it simple always and try to have 3 courses ( soup or salad, main entree and dessert) or 1-pot meals that are nutritious.

Stay away from so many sodas, Kool-Aid now has many great flavors and all you have to do is add club soda instead of water to get that sizzle, my nizzle. Stock up with friends when making purchases and use coupons in the newspaper and on line for products that you can use, especially beverages and proteins. If you buy in bulk, go ahead and portion products into freezer bags and baggies. Scan those supermarket flyers for sales items but ask yourself is this junk food or real food? Keep some seasonings around for taste variations. Just say no, to "crappy food". It'll help prevent you those illnesses that are food related.


Always keep Peanut Butter and Jelly on hand. Try some flat bread or zwieback crackers instead of those processed ones . Get as much fresh stuff as your micro-fridge can stand but only enough to last you for a week. Write down some menu ideas for the week so that you have a list for the grocery store. After all, this is college and you must learn to plan for things.


Now, I'm guessing the smart one are gonna take this advise and those are the ones who will succeed during college and beyond. Why? Because they listened to an expert. One more thing, It's not how much you make, it's how much you keep.
