How to Cook Almond Croquettes

Almond Croquettes – Great Starter

Ingredients

Almond flakes ½ cup

Potatoes (boiled) 6-7 medium sized

Butter 2 tbsps

Milk ¼ cup

Salt to taste

Pepper powder ½ tsp

Fresh coriander leaves (chopped) 1 tbsp

Refined flour (maida) 4 tbsps

Bread crumbs 1¼ cups

Oil to deep fry

METHOD

1. Mash the potatoes till smooth.

2. Mix in butter and milk to make a soft mixture.

3. Add three tablespoons of refined flour, salt, pepper and chopped coriander leaves and mix well.

4. With floured hands, form the mixture into eight equal sized rolls.

5. Refrigerate the rolls for at least thirty minutes or till they are firm and cold.

6. Roll these in breadcrumbs and then in almond flakes.

7. Heat sufficient oil in a kadai and deep-fry the rolls till they are golden brown.

8. Drain onto an absorbent paper.

9. Serve hot with ketchup.
