Baked Pumpkin Seeds

Don't throw away those seeds!

Pumpkin seeds taste great, plus they are really good for you. You can add these yummy seeds to salads, or keep them handy for a healthy snack.

These are two great methods for cooking pumpkin seeds. These methods are both easy and quick. Enjoy!

Did you know that pumpkin seeds are high in fiber?

The first thing you want to do is wash the seeds well. Put them in a strainer, then rinse under running water. Make sure you remove all of the pumpkin strings. Once the seeds are clean, blot them dry.

After drying the seeds, you will want to season them. Sprinkle them with the herbs of your choice, salt, and/or pepper. You can experiment with the flavors you like.

  • Ever tried them with cinnamon?
  • Or an Italian Herb mixture?
  • Or, maybe, a bit of cayenne powder?
  • Or pumpkin pie spice?

Method #2: Stovetop

Heat 2 tbs. butter in a skillet. Add 2 cups of seeds, tossing to coat them in the butter.

Add the seasonings. Cook for 5-10 minutes, stirring, until the seeds are crips. Cool on paper towels before eating.

Method #1: Oven

Preheat oven to 250º.

Toss seeds with a bit of oil, enough to coat them. Sprinkle on seasonings, toss everything together.

Spread seeds on a baking sheet until crispy, about 40-60 minutes.

How to Cook Pumpkin Seeds, Step by Step

  1. Cut the pumpkin in half.
  2. Scoop out the seeds. Using a spoon will help cut the strands away, but don't be afraid to get your fingers dirty.
  3. Try to pull out the larger pieces of pulp from your collection of seeds.
  4. Place the seeds in a colander.
  5. Rinse well, then blot dry.
  6. Mix with oil and desired spices.
  7. Spread out on a baking sheet.
  8. Enjoy the yummy, healthy seeds.

I don't think you'd want to eat the seeds raw, though. I've had them baked and absolutely love them. Plan to do it this year, too.. Oh how I love the Halloween season! :-D

Add as much as you like. You'll see when you do it. It really comes down to preference.

i tried to do this. My problem was, i didn't know what tempture to bake them at, or how long to bake them. they finally ended up in the garbage, what a waste. wish i would have found your hubpage sooner. by the way. my Dad told us boys that eating these seeds would put lead in our pencils, how funny

I cook them a on a bit higher temperature and quicker. I LOVE pumpkin seeds. Roasting the seeds after carving jack'o'lanterns became one of the first traditions I could claim with my step kids. My head really swelled the first time my husband's ex called and actually asked to speak to me...she wanted to know how to fix the pumpkin seeds for her son :-)

I bought some pumpkin seeds from a local grocery packaged in ziplock bags. There is a green flaky and gritty substance in the bag. These are fresh and not yet roasted and taste and smell ok. Is the gritty substance a problem?

Try spreading a bit of Tony Chachere's Creole Seasoning on them. I'm just finishing off my first batch of the year.

MMMMM, so good! This is my favorite time of the year beacause I can roast my own pumpkin seeds. They are so expensive when store bought. After Halloween is a great time to scoop up pumpkins on the cheap at local markets!

Ok...so do you eat them like a sunflower seed (throwing out the outer shell) or do you eat them whole?
