How to Make Jamaican Jerk Pork Chops & Fruited Rice Pilaf Try this easy to prepare Jamaican meal. Impress your friends with this tasty dish. Just add a salad for a complete meal.

First make the Dry Jerk Seasoning Mix all these ingredients together to make dry jerk seasoning. Store leftovers in closed container. It will last for over a month. 1 tablespoon of onion flakes 1 tablespoon of onion powder 2 teaspoons of ground thyme 2 teaspoons of salt 1 teaspoon ground pimento (allspice) 1/4 teaspoon of ground nutmeg 1/4 teaspoon of ground cinnamon 2 teaspoons of sugar 1 teaspoon of ground black pepper 1 teaspoon cayenne pepper 2 teaspoons of dried chives or green onions

This seasoning can also be used on fish Now for the actual meal

Things You'll Need: 4 lean pork chops 1/4 in thick 4 teaspoons of dry jerk seasoning 3/4 cup uncooked white rice 1/4 cup sliced scallions keep white and green parts separate 1 cup chicken broth 2 teaspoons lime juice 1 can of mixed fruit for fruit cocktail

Sprinkle Pork Chops with Jerk Seasoning using 1 teaspoon for all 4 pork chops. Brown on each side in a lightly greased oven proof skillet.

Remove the chops. Add the rice and white part of the scallions. Add the remaining 3 teaspoons of jerk seasoning. Cook until golden brown.

Preheat oven to 350 degrees Drain The fruit and save the syrup

Stir the chicken broth, 3/4 cup of the syrup from the fruit, and lime juice into the rice. Place the chops back over the rice.

Cover and bake for 20 minutes. Stir in fruit and green scallion tops.

Taste and adjust seasonings if necessary. Replace the cover and continue to bake for 15 minutes.

When done fluff rice lightly with a fork and serve
