How to Make the Best Casserole
60Easy and Affordable
I'd like to share with you a recipe for a casserole dish that I frequently make. It is a potato and broccoli casserole dish that is very easy to prepare. Not only is it nutritional, filling and makes a great side dish but it's affordable too. If you are looking for a dish that your family will really love--this is it.
POTATO AND BROCCOLI CASSEROLE (Servings: 4 to 6)
INGREDIENTS:
1-- Bags of chopped broccoli (16 oz)
8-- Large russet potatoes (cut into chunks)
1-- 10 oz. cream of mushroom soup
1-- 1/2 stick butter or margarine
1-- 24 oz. pack of Velveeta cheese slices
1-- 1/2 cup water
1-- Parsley flakes (dried)
Season blend (salt, cayenne pepper and other spices)
1-- 13 inch casserole dish
Foil paper

INSTRUCTIONS:
Cook cut potatoes and broccoli until tender and season to taste. Dilute soup and water in separate bowl. Combine broccoli, potatoes, soup and sprinkle with parsley flakes in bowl--set aside. Melt butter and layer dish. Begin layering with potato/broccoli mixture alternating with slices of Velveeta cheese until dish is filled--top with cheese slices. Loosely cover with foil paper (so topping won't stick) and bake at 375 degrees for 30 minutes.
VARIATIONS FOR RECIPE: For a little variety you may use cream of cheddar instead of cream of mushroom soup and use shredded cheddar instead of Velveeta cheese. To make a complete meal-- add sauteed cut pieces of boneless chicken breasts and voila, bon appetit!
