Here are Some Great Ideas

I always have left over mashed potatoes and after throwing away so many potatoes I decided to come up with a few ideas on how to use my left overs. I love Pierogies, potato cakes, potato soup and Shepard's pie so I decided to come up with a few recipes from left overs to make use of them instead of just tossing them out.


Shepard's Pie

1 pound ground beef ( ground turkey or ground pork )

1 small onion

2 packages brown gravy mix

2 cups mixed vegetables, green beans or corn

4 cups left over mashed potatoes

Directions

Brown ground beef along with onions until done, drain grease.

Layer ground beef on the bottom of a casserole dish.

Mix gravy with warm water pour over ground beef.

Layer mixed vegetables on top of beef. (I rinse mine with hot water to thaw)

Spread mashed potatoes on the top of the beef and vegetables. (I use a plastic baggie with a hole cut in one corner then squeeze potatoes in small mounds across the pan until completely covered) Many people use a cake icing bag for this with a decorative tip. If I am having company over I do it that way but I am usually in a big hurry & like to throw the bag away.

* Bake 375 degrees or until heated thoroughly let cool for a few minutes for gravy to set up and enjoy

* Bake 375 degrees or until heated thoroughly let cool for a few minutes for taco sauce to set up and enjoy

I serve mine with a small bowl of each of these items so everyone can choose what they would like on their Fiesta Pie: cheddar cheese, jalapenos, salsa, sour cream, shredded lettuce & tomatoes.

Fiesta Pie

1 pound ground beef ( ground turkey or ground pork I like Sausage in mine )

1/4 Cup frozen onion bell pepper mix

1 packages taco seasoning mix

2 cups frozen corn

4 cups left over mashed potatoes


Directions

Mix ground beef, milk, bread crumbs and 3 tbsp of the onion soup mix. Mix well and layer on the bottom of a casserole dish.

* Cover and bake 15-20 minutes on 350 degrees or until done

Combine remaining soup mix, potatoes, parsley and salt. Mix well spread over the meat mixture.

Sprinkle top with cheese and paprika cover with foil

* Bake for 5-10 minutes or until cheese is melted and potatoes are heated thoroughly. Serve hot

Beefy Potato Bake

1 pound ground beef ( ground turkey or ground pork )

6 oz can evaporated milk

4 cups mashed potatoes

1 envelope onion soup

1/2 cup bread crumbs any kind (You can substitute crushed crackers)

1/2 tsp salt

1/2 tsp paprika

1 tsp parsley

1 cup shredded cheddar cheese

Fry in oil

Drain on paper towel

Serve hot or cold

Potato Mint Pierogies

1 package won ton wrapper (find these in produce area)

1/1/2 cups mashed potatoes (even instant works but make them on the very thick side)

1/4 cup diced ham

2 tbsp fresh mint finely cut

1/2 tsp dried garlic * optional or garlic salt

1/2 tsp dried bell pepper flakes * optional

1 Small cup of water

* Oil for frying

Directions

Mix your potatoes, ham, mint as well as seasonings. Mix well. Using your water to wet the edges of your won ton wrapper use your finger dipped into the water run your finger around the won ton to moisten the otter edge to seal it.

Add about a half teaspoon of the potao mixture to the middle of the won ton wrapper.

Fold the wrapper into a triangle pinching the edges together as you go.

Heat your oil and deep fry pierogies on each side until browned.

Drain on paper towels and serve hot or cold.


POTATO PANCAKES

2 cups mashed potatoes
1/4 cup flour
1/4 cup milk
1 egg beaten
1 tbsp onion minced *Optional*
1 tbsp. green pepper minced *Optional*
cooking oil
Salt & pepper to taste 

Mix mashed potatoes, flour, milk, egg, onions and green peppers. Salt and pepper to taste. Form into 3" patties and fry in cooking oil. Brown on both sides. Drain on paper towel and serve.
