How to boil eggs

Eggs are one of the most versatile food that is in nature because,it is possible to prepare several courses of a menu from antipasti, the pasta ending with dessert.
The most used and consumed eggs are those of hens that have a significant nutrient rich because of fats, mineral salts and fats.
Although the methods of cooking eggs are many, this time we will consider the simplest: the cooking in water with the shell which you get the eggs "a la coque" or "boiled".


1. if you intend to prepare hard-boiled eggs or coque, the first thing to do is to apply a small hole at the egg more rounded side, with a pin, so that the air contained in it manages to escape without breaking the shell.


2nd. Plunge the eggs in a pot of boiling water, turn down the heat slightly and let simmer until desired degree of cooking.
if you decide to use eggs at room temperature, remember that they will have a cooking time slightly shorter than the eggs are removed from the refrigerator.


3rd. The cooking time for eggs is calculated from the time they are immersed in boiling water: in the proposal, the egg was cooked for 3 minutes so the yolk is soft enough and the albumen is very firm.


4th. If you will like the egg at the coque, cooking will be 4 minutes and albumen and yolk will be even more firm.
Usually, once cooked, the egg is placed on the coque-door  gently and opened the egg on top.


5th. Where continue cooking for 8-10 minutes, the eggs begin to get hard to become firm.
In this case the eggs are removed from the shell and cut into slices or half


6th. The cooking of eggs can be different: in this picture, the egg was boiled for 6 minutes, giving rise to the so-called egg "barzotto" Known for its yolk hard enough that it can be cut but still quite soft.


7th. If the eggs are cooked for 8 minutes, the yolk will be quite soft in the middle of a beautiful and lively yellow.
This cooking is ideal for the preparation of dishes with boiled eggs.


8th. After 10 minutes of cooking, the egg yolk are completely coagulate but still a nice bright color.
Remember not to cook the eggs never more than 10 minutes because the yolk becomes very hard inside and greenish outside.


9th. Wanting to quickly cool the eggs you have to remove them from boiling water, you can dip them in a bowl with ice and water before take the shell off.
In addition to block the cooking, the cold water will encourage the removal of the shell from the eggs.

Advice

On average, an egg can be stored for about 3 or 4 weeks but, to be sure of their freshness, there are guidelines to follow:

- Shaking the egg they must not produce any noise

- If immersed in a glass of water in which was dissolved a spoonful of salt, they must go the bottom of the glass

- The white must be very dense and keep the yolk suspended if the two components are separated, it means that the egg is no longer fresh.

Thank you for your advice in cooking eggs. I thought that cooking eggs is just simply cooking for ten minutes. Now I know better.

Thanks, eggs and milk are the only two complete food in nature, if they are cooked badly or conserve inadequately, they lose many of their properties and in some cases may be harmful to humans.
