Maryland Soft Shell Crabs

Growing up in Annapolis, Maryland definitely had its advantages when it came to seafood. I would spend most of my summer days on one of the many rivers off of the Chesapeake Bay fishing and crabbing. The day would always end having caught at least 2 or 3 good sized soft crabs. Taking them home to my father is where I learned how to clean and cook them. The recipe I share with you here is very simple, but it's the only way I will ever cook a soft crab. It's delicious!

Cleaning Soft Crabs

Here is a video which explains how to clean a soft shell crab prior to cooking.

Cooking Soft Crabs

Ingredients

  • 4 Medium to Large Soft Crabs
  • 2 Eggs
  • 1/3 Cup milk
  • Butter or Margarine
  • 1 Cup Flour
  • 2 Tblsp Old Bay or J.O. seasoning
  • 2 Tsp of Pepper

Preparation

  • Combine flour, Old Bay seasoning and pepper in a medium size bowl or pan and set aside.
  • Combine eggs and milk in a small bowl and set aside.
  • Dip crabs into egg mixture, covering crab completely.

  • Put egg covered crab into the flour mixture and cover completely.

  • In a frying pan, on medium heat, put enough Butter or Margarine in to cover the bottom.
  • Add your freshly coated Soft Crabs to the frying pan.

  • Cook crabs 2 to 3 minutes on each side until they are golden brown/red.

I prefer to eat my soft crabs as a sandwich, but they are absolutely delicious anyway you want to eat them.
