How to make Chicken Fried Rice
64Getting it Ready
So you want to make chicken fried rice, eh? So check this out, here's what you'll need:
1) A skillet, preferably a large electric skillet, but if all you have is a small frying pan for your stove top, that works as well
2) A box of instant rice
3) 2-3 pieces of boneless, skinless chicken breast
4) A bag of mixed vegtables
5) One small onion
6) Soy Sauce
7) 2 sticks of butter or margrine
8) Garlic or garlic supplement
9) olive oil
10) 3-4 eggs
Making it Ready
So now that we have all of our ingredients, lets get started. The first thing you are going to want to do is get your rice ready, remember rice is equal part water and rice so if you want say 8 cups of rice end product, you will want to boil 4 cups of water and add 4 cups of rice and so on. After you get your water going, you can go ahead and fire up your skillet. Now this is where the size of the skillet comes into play. If you have a large skillet, you can make upwards of around 12 cups of rice + ingredients in it. If you only have a small stovetop skillet, i would suggest no more than about 4 cups, but you can judge this on your own for the size skillet you have. Then after you have both water going and skillet getting hot, you can go ahead and put some olive/vegtable oil in the skillet. The first thing you want to start cooking on your skillet is the onion. I myself am not a big onion fan, i use about half a small onion for around 10 cups of rice, however this can be adjusted to your liking. About three minutes after starting your onion, you can put your eggs on, again this can be adjusted to your liking. I usually go with about 3 or 4 eggs for 10 cups of rice. You are going to want to either A) scramble them in a jar/cup then pour on to skillet, or B) put them on one at a time and be very careful not to mix them with the onion. By now, depending on how much rice your wanting to make, your water should be boiling. Add your equal part of rice to the water, remove from heat, and cover. Meanwhile, back to the skillet, now its time for the chicken breast, preferably defrosted, needs to be cut in to bite-size pieces then placed on skillet. the chicken will be a nice tender brownish color when cooked fully. This will take about 5 to 7 minutes. At this point you can add garlic to the mix for some extra flavor cooked in. Then after that, the last and final item before the rice are the mixed vegtables. these will only take a couple minutes to be ready. you can add about half a stick of your butter or margrine to the vegtables for flavor. By now the rice should be firm and ready to go. Dump your rice on top of the items in your skillet, add soy sauce to your liking, add the final stick and a half of butter, and stir. Wa-la, you now have chicken fried rice.
