It's called patience, remember that? In todays world everyone is in a big rush to get nowhere. But to make Mom's roast beef your gonna have to take your time or at least 3 hours of it.
Go to the store and buy a nice roast. It doesn't really matter what kind because it's gonna be nice and tender and falliing apart when your done! Get a nice large roasting pan with a lid or if you don't have a kitchen full of wonderful pots and pans and gadgets and whatnots a 13x9 inch baking pan and a sheet of tin foil will do!
Put the roast along with a few potatoes and carrots chopped in half and peeled, try a sweet potatoe too! Salt, pepper and alot and I mean alot of onion powder, garlic powder and whatever else suits your taste. Here are some of the best kept secrets they didn't tell us. In the bottom of the pan add a couple inches of water and some beef bouillon. Try some soy sauce if you don't have bouillon. Now slap on the lid, foil or whatever you plan on using for a cover. Bake at 350 for about 3-3 1/2 hours. Take the foil off after 2 hours and turn the heat up to 375 degrees. Keep an eye on the juice in the pan and add more if it's getting low. You will know it's done when you can't stop picking at it and tasting it! Get a small pan and use the juice and a package of powdered gravy mix to make some delicious gravy. Or you can have it au jus with the beefy juice in the pan. Enjoy!!

Ahh, so patience really is a virtue. A roasting pan with a lid sounds useful. I have always just used foil. But I should look into getting one of those.
