How to make easy, tasty and cheap Chicken Soup

There is nothing better on a cold winter afternoon than a bowl of Chicken Soup. This post provides my personal favourite recipe, its simple, cheap and tastes great! You will need the following;
2 Pre-cooked Chicken legs (Sunday dinner leftovers!)
1 Onion Finely Sliced
1 Clove of Garlic finely sliced
1 Large Potato chopped small (2cm pieces)
1.5 pints of boiled water
5 Medium sized mushrooms chopped
Sprig of Thyme (Optional)
Pinch of Salt & Pepper
Cook off the onions and garlic in a hot pan with a knob of butter for 2-3 minutes until brown. Stick all the above in a casserole dish with a lid in a hot oven for an hour at 180-200 degrees. Pull out the bones and serve with a piece of crusty bread – Could this be any easier? I think not! Enjoy and let me know what you think with a comment.
