Fried Mexican Ice Cream:
There are many different ways and minor details that can change from one fried ice cream recipe to another, but this is one of the more popular recipes I've been able to find online for fried ice cream.
Ingredients Needed:
1 pt. vanilla ice cream
1/2 c. crushed corn flakes, cookie crumbs, or something similar for coating
1 tsp. cinnamon
2 tsp. white sugar
1 tsp. brown sugar
1 egg
Oil for deep frying
Honey
Whipped cream (optional)
Scoop out 5 balls of vanilla ice cream. Return them to the freezer for approximately 20 minutes. During this time mix the crumbs, cinnamon, and sugars. When the 20 minutes are up, take the frozen ice cream balls and roll them through the crumb mixture before promptly freezing them again. Beat the one egg and the dip the coated ice cream balls in egg before rolling them again in the remaining crumbs. Freeze them again and then you can prepare the next step, or you can repeat the crumbing process to get a thicker outer coating if that's what you feel like.
Freeze the ice cream balls until ready to use (for thicker coating repeat dipping in egg and rolling in crumbs). Once they appear ready to serve, prepare the fryer.
Heat the oil to 350 degrees. Place a frozen ice cream ball in fryer basket or on a perforated spoon, and lower it into the hot oil for one minute. Immediately remove and place on dessert tray, do not over fry. Drizzle with honey and top with a dab of whipped cream, if desired. Continue to fry the ice cream balls one at a time.
The fried ice cream will be crunchy on the outside and just beginning to melt on the inside. For the perfect balance of dessert.
