Beans are a great source of protein, especially for vegetarians who don’t get protein from their non-meat diet. However, if you want to cook vegetarian bean recipes with fresh beans, which are a lot cheaper than canned beans, you need to learn how to cook them the right way. If you don’t cook them right, they will not taste right, and you will probably have trouble digesting them.
These methods work for pretty much any kind of dried beans that you want to use, so you only have to learn one way to do this, and you’ll be able to have beans whenever you want to. However, if you are making lentils or split peas, you can skip the step that involves soaking them in water.
The first step to preparing beans for vegetarian bean recipes is to rinse them under cold water to make sure all the dirt is removed. You’ll also want to look through them to make sure there are no small stones or dirt in between the beans. The next step is to soak the beans, which makes the beans cook faster and helps get rid of any digestion problems that wrongly-prepared beans might cause. There are two ways to soak the beans. Both involve the ratio of one cup of beans to four cups of water. The first method is faster than the second one, but they are both viable methods depending on when you want to cook with the beans. For the first method, bring the water and beans to a rolling boil for one minute, remove from the heat, cover, and let sit for an hour or until the beans are uniformly tender. For the second method, leave the beans in the water and let soak in your refrigerator overnight. This is the healthier method because it keeps more of the nutritional elements of the bean in the bean instead of boiling some of them away. Again, you’ll want to check for uniform tenderness when they’re done soaking. You can reserve the water you soaked the beans in to cook the beans in, which provides better nutritional value, or you can rinse the beans and cook them in fresh water, if you’re worried about digestion problems. Bring the water and beans to a rolling boil for ten minutes, remove the foam from the top of the water, cover, turn down the heat, and simmer for at least one hour, or until the beans are tender.
Once you cook the beans correctly, you can turn them into some great vegetarian bean recipes. One great recipe is for a black bean burrito. Cook the black beans in the method explained above, and spoon into the center of flour tortillas. You can also include cooked rice or roasted diced potatoes in the burrito if you want it to be more filling. Then, top with your choice of ingredients, including shredded cheese, lettuce, diced tomatoes, salsa, guacamole, or sour cream. You can also easily create your own black bean burgers by blending cooked black beans and rice in a food processor, and combining with sautéed garlic and chopped onions, ginger, allspice, nutmeg, and some jalapeno pepper. Transfer to a bowl and add some bread crumbs, and season with salt and pepper. Form the mixture into patties, and fry or grill until both sides become crispy. Top your burger with lettuce, tomato, onions, and a pickle for a complete burger.
