Microwave Meatloaf Recipe

What you will need:

2 lbs ground beef or ground turkey

crumbs from 2 slices of bread

1 chopped onion

2 eggs

1 cup ketchup

1/2 cup milk

2 tablespoons mustard

1/2 cup brown sugar

salt and pepper

plastic wrap

You will also need a silicone or plastic microwave safe bundt or fluted cake pan.

Step 1: combine ground beef, eggs, bread crumbs, salt and pepper, chopped onion milk and 1/2 cup ketchup in a large bowl. Mix with your hands or a spoon until well blended.

Step 2: grease pan and place meat mixture in it in the shape of a loaf.

Step 3: cover with plastic wrap and poke holes in the top to release steam.

Step 4: place in microwave on high for 10 minutes.

Step 5: remove plastic wrap and drain off excess grease.

Step 6: microwave on high for 5 more minutes (drain any additional excess grease)

Step 6: combine mustard remaining ketchup and brown sugar, mix well and spread on top of the meat loaf evenly.

Step 7: microwave on high 3 more minutes, remove and let cool for 5 minutes before serving.
