Broccoli is one of my very favorite vegetables, and also one of the healthiest. In recent years, it's became especially well-known as a vegetable that fights many types of cancer. Broccoli is also nice because even non-organic broccoli is relatively free of pesticide residues and other harmful chemicals.

The easiest way to cook broccoli is simply to steam it. I chop mine pretty small so it steams faster and is easier to eat, but you need to keep a careful eye on it to make sure it doesn't overcook. There's nothing worse than mushy broccoli!

When it's steamed to your satisfaction, you can either serve it plain as a side dish or toss it with a little lemon. I sometimes like to add a dash of seasoning as well, but that's not necessary, especially if you're watching your salt intake. Steamed broccoli also tastes delicious with oil-and-vinegar based salad dressings, such as Newman's Own Balsamic Vinaigrette.

Broccoli Stir-Fry Recipes

My favorite way to eat broccoli is in stir-fries. If you've never tried to make a stir fry before, it's astonishingly easy and requires no special equipment. A wok is a helpful tool, especially if you eat a lot of stir-fries, but I've managed for years with nothing fancier than a couple of good-sized cast iron and non-stick frying pans.

I like broccoli in stir-fries because it's really easy to get that perfect al dente broccoli I love so much. No mushy, overcooked broccoli for me!

Broccoli Soup Recipes

Another popular way to eat broccoli is in soups. Honestly, broccoli soup has never been my favorite. I don't dislike it, but broccoli in soups tends to be overcooked and flavorless, so most of the time I don't really see the point.

However, if you have family members, especially kids, who hate broccoli, broccoli soups are a fantastic way to trick them into eating it. Even a lot of people who hate broccoli love broccoli soup!
