68Spinach is one of the healthiest and most nutrient-dense foods in the world. Low in calories and fat, it is an excellent source of iron, calcium, magnesium, dietary fiber, folic acid, vitamin A, vitamin C, vitamin K, vitamin E, and many other important nutrients.
Unfortunately, spinach is sadly underappreciated for its taste. If you've never liked spinach, I hope you will find a recipe here that will make you change your mind. If you've always loved it, I hope you will find a new favorite.

Mediterranean Spinach Recipes
The Mediterranean countries have created or inspired many of the world's best spinach recipes. Personally, I love the Greek spinach-feta pie, spanokopita, italian spinach lasagna, and many more. One of my family's very favorite dinners is Baked Ziti With Spinach and Tomatoes, though I usually substitute mushrooms or diced eggplant for the sausage.
