Hyderabadi Kheema

 Ingredients:

 Lamb mince: 500gms.

 Yogurt: 1/2 cup

 Salt: to taste

 Turmeric powder: 1 tsp

 Garlic paste: 1 tbsp

 Onions: 2 medium

 Ginger: 1" piece

 Tomatoes: 2 medium

 Green chillies: 2

 Oil: 2 tbps

 Green cardamoms: 5

 Black cardamoms: 2

 Cloves: 3

 Cinnamon: 1"

 Bay leaf: 1

 Peppercorns: 5

 Cumin seeds: 1 tsp

 Red chilli powder: 1 tbsp

 Coriander powder: 1 tbsp

 Coriander leaves (chopped): 2 tbsps

 Boiled egg: 1

 

 Method of preparation:

 1. Mix lamb mince, yogurt, salt, turmeric powder and garlic paste. Keep aside for at least an hour.

 2. Peel, wash and chop onions. Peel and chop ginger. Wash and chop tomatoes. Remove stem, wash and chop green chillies.

 3. Heat oil in a pan. Add green cardamoms, black cardamoms, cloves, bay leaf, peppercorns and cumin seeds and let them crackle. Add chopped onions and saute till onions are golden brown in colour.

 4. Add chopped ginger, chopped green chillies, red chilli powder and coriander powder.

 5. Cook for a minute and then add chopped tomatoes. Cook till fat leaves the masala.

 6. Add marinated lamb mince. Cook on medium heat till mince is done.

 7. Garnish with boiled egg cut into quarters and chopped coriander leaves.
