to cook chinese noodle and to fry egg rice is very easy! my daughter likes instant noodle and egg fried rice very much. so I have to cook for her almost everyday. here are my recipes.

noodle cooking:

1. the easiest and the laziest way is to buy Maruchan brand instant lunch at AldI store. this instant noodle has differnt flavors and the full box with 6 packages less than $2. we like shrimp flavor. you just follow the instruction to cook in microwave. after done, before eating, you can add an egg and stir, then put it back microwave for 30 seconds or less, it will taste greater.

2. if you choose to buy ordinary wheat noodle or rice noodle, follow this way. first add some grease in pot until hot, then cook water until boiling, put noodle into water. You can add some chopped pork or mince or eggs as you like; but don't add these so early. If you want them tender, you can add these right before done; later add soy bean sauce, salt, green onion, ginger, chinese white pepper powder. Or add a tea spoon of chinese dark vinegar if you like a bit sour taste. it tastes great ! I usually cook noodle with chicken soup instead of water. my husband doesn't like grease but likes chicken so much while my daughter doesn't like meat but soup. So whenever I cook chicken, I add 1 quarter of water into the whole chicken to stew; after it is done, all the grease of chicken has flown out into water which we call soup. Then he eats chicken, we save the soup for noodle. Of course, if you use chicken soup instead of water, it is unnecessary to add grease. You can add more water if the soup is too greasy as you wish.

egg fried rice

heat oil or grease first, then put eggs in to fry (egg amount as you like, do not stir. you can also should pork mince instead), until the eggs turn into golden. You can stir into pieces; add salt as you wish; put cooked rice into it and stir; then add soy bean sauce; after completely stiring up, you can turn off oven fire; then add chopped green onion, chicken bouillon powder, oyster sauce, or chinese white pepper powder. that is it.

all chinese seasoning can be found in any chinese store. the chinese white pepper should be like black pepper round shape and be ground yourself with pepper mill because the white pepper powder is quite different from this original one. you can smell. by the way, be sure , don't go to small Oriental grocery store. I have been such store once, most of items are expired but replaced stickers to cover on purpose. I was outraged. that is a wicked and worst store I have ever seen.

enjoy your food. if you like, I will write more to teach you more chinese food cooking.
