Iced Molasses Cookies Recipe
65
Does anyone remember how you used to be able to buy iced molasses cookies in the grocery stores? I remember eating them when I was a kid, but now, it seems like they're pretty much impossible to come by anymore, especially since Mother's Cookies shut down. Anyhow, these cookies are designed to be soft and chewy, and icing always adds a nice touch too. Makes two dozen.
Ingredients:
3/4 cup butter, softened (not melted)
1 cup brown sugar
1 egg
1/3 cup molasses
1/4 tsp. salt
2 tsp. baking soda
1 1/2 tsp. ginger
2 1/4 cup flour
Icing:
1 cup sugar
2 tsp. milk
4 tsp. corn syrup
1/4 teaspoon vanilla extract
Preparation:
Pre-heat oven to 350 degrees. Mix together butter and sugar, then beat in egg. Ass molasses, salt, cinnamon and ginger. Gradually add in the flour. Drop table-spoonfuls onto a greased cookie sheet, and bake 7-9 minutes.
To make the icing: Stir sugar and milk together until smooth, then add corn syrup and vanilla. If mixture is too thick, add more corn syrup until it is easily spreadable, but not too thin.
Let it dry, and you're ready to nom on some chewy, nostalgic, molasses goodness.
