(Alternative names : Masala Desi Chicken, Spicy Grilled chicken the Indian Way )
This will be one of the best and juicy Masala Grilled chicken you will ever taste. This is one of my favorites to impress the guests. Try it and serve your guests too.. I am sure they will ask for this Masala Grilled Chicken recipe.
For this recipe, use skinless chicken thighs. You could use about 10 to 12 skinless chicken thighs (about 3 pounds). Serves about 5 people.
Ingredients for Marinade paste for "Spicy Indian Masala grilled chicken"
2 tablespoon vegetable oil
3 tablespoons lemon juice (or white vinegar)
1/2 teaspoon cayenne pepper (or red chili powder)
1 tablespoon garlic paste
1 tablespoon ginger paste
1 tablespoon garam masala
1 teaspoons ground cumin
1/2 teaspoon salt (or according to taste)
2 tablespoons plain yogurt

Preparation Method :
Marinade the chicken : Fork each piece of chicken on both sides. Put together the marinade ingredients and rub it over the chicken pieces. Make sure that each piece is well covered. Let it marinate overnight in the refrigerator.
Important Tip: Cover the container with plastic wrap so that the juice won't dry out. Also Do not use much salt in your marinade. Salt causes the juices to be drawn out, leaving your chicken dry. If your chicken needs salt, apply it just before serving
Grilling : Grill the chicken over medium heat until it is tender and no longer pink inside. Grill for about 25 to 30 minutes. Turn the pieces occasionally to ensure even cooking.
This is a good alternative to Tandoori chicken.
Additional Tips and Variations that you could try with this recipe.
1. If you like cilantro, add 1/2 cup Green Cilantro Chutney about 1 hour before grilling.
2. You can try broiling instead of grilling. You could use the grill or conventional oven to broil.
