Italian Sausage and Fennel Pasta
63Ingredients
2 tbs olive oil
1 med onion, thinly sliced
750g Italian sausages, skin removed
1 fennel bulb, thinly sliced
3 cloves garlic, chopped
salt and pepper
shaved parmesan cheese
500g cooked pasta
Method
- Heat oil in pan and saute onion until soft, add sausage meat to pan and cook until lightly browned.
- Stir in fennel along with some of the fronds/leaves and cook until soft.
- Add garlic, salt and pepper, a little of the pasta water and continue cooking until meat is cooked.
- Stir in cooked pasta, mix well and serve with shavings of parmesan cheese.
Pasta with Italian sausage and fennel is a very old family favourite of mine. I remember my grandmother used to cook it for us as a very quick meal when we used to turn up at short notice. The aroma of the fennel and the italian sausage always used to send the family back to family meals in Italy.
