1 pound of ziti pasta
4 cups Marinara Sauce
8 ounces fresh mozzarella, chopped or shredded
1/2 cup freshly grated Parmigiano-Reggiano cheese
1 pound ricotta cheese (optional)
1. Bring a pot of liberally salted water to a boil, add pasta and cook until almost al dente then strain, the pasta should be slightly undercooked.
2. Preheat oven to 375°F. Transfer pasta to a 3 to 4 quart baking dish. Add 2 cups of marinara sauce, 4 ounces of mozzarella, and 1/4 cup Parmigiano-Reggiano cheese (if using the optional ricotta cheese add it all at this point also), and toss until well combined.
3. Top with the remaining sauce and sprinkle on the remaining cheeses. Place the baking dish in the oven and bake until the cheese on top is melted and slightly browned, 15-20 minutes

BAKED ZITI WITH ITALIAN SAUSAGE
1/2 lb. sweet Italian sausage
1/2 c. mushrooms
1/3 c. onions
1 c. peppers
8 oz. ziti
3 1/2 c. spaghetti sauce (can be jar)
1 c. mozzarella cheese
1/4 c. Parmesan cheese
1 clove garlic
Slice sausage - brown meat in skillet. Add garlic, mushrooms, peppers and onions; saute vegetables until soft. Drain excess fat off. Cook ziti according to package; drain.
Combine ziti with 2 cups of sauce. Spread 1/4 cup sauce on bottom of pan. Arrange 1/2 the ziti in pan. Spoon sausage vegetable mixture evenly over ziti. Top with 1/2 cup sauce, 2/3 cup mozzarella cheese and 2 tablespoons Parmesan cheese. Cover with remaining ziti sauce and cheese. Bake at 350 degrees for 25 minutes

Ingredients
1 box (16 ounces) BARILLA Ziti
3 tablespoons butter
3 tablespoons all-purpose flour
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon dried oregano
1 1/2 cups milk
4 (approx. 2 pounds) tomatoes
1/2 cup Parmigiano cheese, freshly grated
1/4 cup fresh basil, chopped
1/4 cup Italian flavored bread crumbs
1 tablespoon olive oil
COOK Ziti as directed; drain and set aside.
MELT butter in a small saucepan over medium heat.
ADD flour, salt, pepper and oregano; cook 1 minute or until bubbly. Gradually stir in millk. Cook 2-3 minutes or until thickened, stirring constantly. Remove from heat; set aside.
PREHEAT oven to 350 degrees.
PEEL, seed and chop 3 tomatoes. Slice remaining tomato; set aside.
Combine bread crumbs and olive oil in a small cup and set aside.
STIR together pasta, white sauce, chopped tomatoes, cheese and basil in a large bowl.
PLACE pasta mixture in a baking dish; arrange tomato slices on top and sprinkle with bread crumbs.
BAKE for 30 minutes. Cool slightly before serving
Prep Time: 10 minutes
Cook time: 30 minutes
Servings: 4-6
