They work tirelessly in their house dresses and practical aprons. The slip on flat shoes clop on the marble floors for hours while the hands are busy washing, cutting and cooking. The air is filled with steam and the aroma of fresh ingredients. A big tablecloth is spread out to cover the heartland of the kitchen. At around one thirty the plates are dealt on the table with silverware tossed at the sides. Empty glasses and napkins are added in as younger family members enter the kitchen.. Water and wine in old pitchers are grouped in the center. A big oblong loaf of fresh baked wood fired bread is pressed in the left arm and against the bossom while the right hand wields a long knife cutting bread slices toward the body and tossing them on the table loose. A calamity of family members all talking at once gather around the table some pitching in where needed. There are a stack of bowls next to the stove. Today's risotto is served fresh and hot out of the large pot and is passed hand to hand until everyone has a hot steamy bowl in front of them. .Someone is hand grating fresh pecorino cheese that will be just enough for everyone to enjoy on their dish.
