How I Long For Something Creamy!!

On the candida diet, it seems difficult to get all the flavors in a soup that you're accustomed to eating when you can't have milk or cream to give it body. This recipe, however, is a beautiful dream of green and cream!! It's easy to prepare, and can also be a slow-cooker recipe for a flavorful supper.

Ingredients:

  • Three stalks of celery. **If the leaves are green and fresh-looking, chop them up and add them, too!!**
  • 1 carrot or 4-6 baby carrots
  • 1 large clove garlic
  • 2-3 Tbs. Oil
  • 1 medium avacado
  • 4 Tbs. butter
  • 2 cups Rice Dream or other rice milk
  • 1 and 1/4 cup chicken broth
  • 1 cup water
  • Pepper or garlic pepper to taste
  • Salt

Directions:

  1. In a skillet, heat oil over medium heat.
  2. Chop garlic, celery and carrots into small pieces.
  3. Saute until vegetables begin to soften.
  4. Cut avacado into smaller pieces.
  5. Pour veggies into a blender. Add 1/4 cup of chicken broth and the avacado.
  6. Blend until the mixture is essentially pureed.
  7. Meanwhile, in a saucepan, add the butter, pepper and salt. Melt the butter.
  8. Add Rice Dream, chicken broth and water. Heat for about two minutes.
  9. Add vegetable puree.
  10. At medium heat, let soup simmer for several minutes.
  11. Put a lid on the soup, and turn the heat to low. Simmer until ready to eat.

 Serve with another meal or by itself!!  Garnish with a celery leaf and plain yogurt.
