Jamaican Pork Roast
63This is a recipe that I make in a crockpot. Actually I have used pork loin, or pork tenderloin. Despite the small amount of liquid in it, it still comes out delicious and tender. At our house, while I would prefer to serve it with some kind of rice and beans, my daughter insists on cinnamon applesauce.
Jamaican Pork Roast
2 tablespoons vegetable oil
3 ½ pound pork boneless loin roast, trimmed of fat
1 teaspoon salt
1 small onion chopped (about ¼ cup)
1 small jalapeno, seeded and finely chopped
2 cloves garlic, finely chopped
1 tablespoon packed dark brown sugar
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon ground allspice
2 teaspoons cider vinegar
2 teaspoons chopped fresh thyme leaves, optional
Heat oil in 12-inch skillet over medium-high heat. Cook pork in oil about 10 minutes, turning occasionally, until brown on all sides. Sprinkle with salt.
Place pork in 4- to 5-quart slow cooker. Mix remaining ingredients except thyme in medium bowl; spread mixture over pork.
Cover and cook on low heat setting seven to eight hours. Sprinkle thyme over pork. Makes 8 servings.
