The Perfect Summer Dessert

Who doesn't like a nice light dessert for the summer months? This light, moist cake is a family favorite and potluck pleaser.

1 Cake Mix (any flavor you like)

1 small pkg jello (any flavor you like)

1 small pkg instant vanilla pudding

1 and 1/2 cup milk

5 to 6 oz whipped topping

Mix and bake cake according to box directions. While cake is still hot, poke holes all over the cake with a fork. Mix jello according to package directions and very slowly pour all over the cake. Let is soak in good and cool. Mix the vanilla pudding and milk let set up a little and fold in the whipped topping. Frost cake. Keep in the refrigerator.

I usually try to do a lemon cake mix with lemon jello or orange mix with orange jello. Cherry is also quite delicious. If you like the frosting to match the flavor of the cake--just add couple drops of the appropriate food colour.

This cake is great! I had only had the jello cake with plain cool whip as the frosting ~ this beats it b far!! The pudding frosting adds so much to the cake. I used strawberry jello and added strawberries on top. It was great!!!!

I baked this cake for my company's bake sale yesterday and it was a huge hit! I used lemon cake mix with lemon Jell-O and for the frosting, I just used Cool Whip mixed with some powdered sugar and lemon zest. It turned out so light, fluffy and moist...great recipe!
