Original Kentucky Fried Chicken

Ingredients

  • Chicken - 1 of 2 kg (divided into 8 pieces)
  • Salt - 1 tsp
  • Chinese salt – 1 tsp
  • Meat tenderizer powder – 1 tsp

Procedure

Mix all of the above ingredients and coat the chicken pieces with this mixture. Put the chicken pieces aside for an hour to marinate. Than steam the chicken pieces for 15-20 minutes. Now dip each piece in the batter and deep fry. Serve with ketchup and enjoy.

Batter

  • White flour – 10 tbsp
  • Corn flour – 2 tbsp
  • Salt – ½ tsp
  • White pepper – 1 tsp
  • Baking powder - 1 tsp

Mix all of the above ingredients with cool water to make a consistent batter and keep aside for 10-15 minutes.


Hot and Spicy Kentucky fried chicken

Ingredients

  • Chicken – 1 of 2kg (divided into 8 pieces)
  • Salt - 1 tsp
  • Black pepper - 1 tsp
  • Chinese salt - 1 tsp
  • Chili sauce – 3 to 4 tbsp
  • Meat tenderizer powder – 1 tsp
  • Cornflakes – 1 cup (crushed into small pieces)
  • Bread crumbs – 1 cup (crushed into small pieces)
  • Chips – 1 cup (crushed into small pieces)

Mix the above ingredients excepting cornflakes, chips and bread crumbs and coat the chicken pieces with this mixture. Put aside to marinate for an hour. Than steam the chicken pieces for 15-20 minutes. Dip the chicken pieces in the batter, followed by cornflakes, chips and bread crumbs and then deep fry. Serve with ketchup and enjoy.

  • Chinese salt – ½ tsp
  • Salt – ½ tsp
  • Paprika – 1 tsp
  • White pepper – 1 tsp
  • Chili sauce – 2 to 3 tbsp

Mix the above ingredients with cool water to make a consistent batter.

is there such a thing as 'chinese' salt? Whats so different about it compared to other salt? Are there additional ingredients?

How did you derive the recipe? Did you ever work at KFC? Some people suggest soaking chicken in salt/ brine for half hour before proceeding to cook the chicken. Of course unlike KFC which uses a pressure cooker which many households do not have, your suggestion is to steam the chicken - will this affect the texture (esp. chicken skin) when you cook it...does it crisp up like KFC's?

The texture will be added by the corn flakes, chips and bread crumbs.
