This Pasta Salad is easy to make and tastes great! The ingredients can be found at any store or come straight from your garden. Total time to prepare this salad is less than 15 minutes. Large shell macaroni is best but medium shells will do in a pinch.

Things You'll Need:

•1 lb. large shell macaroni

•2 medium tomatoes

•1 jar of Spanish olives

•1 cup of real mayonnaise

•1 large cucumber

•1 tsp. salt

•1/2 tsp pepper

•dash of msg

Step 1

Boil the pasta according to the directions on the packaging, usually about 7 to 10 minutes. Stir the pasta from time to time so it does not stick.

Step2

Peel the cucumber. Slice the cucumber in half long ways. Scoop out the insides with a spoon and rinse remaining seeds. Now slice the cucumber. Slice the olives. Save the olive juice. Quarter the tomatoes.

Step3

When pasta is ready, drain and rinse with cold water. Mix the pasta, mayonnaise, olives, cucumbers and tomatoes in a large bowl. Add the salt, pepper and msg, mix again. Finally, add the olive juice from the jar and mix. Chill for 30 minutes to an hour.

You can easily double this recipe by doubling the ingredients!

You can keep this for up to 2 weeks in the fridge.

This recipe calls for REAL mayonnaise, not Miracle Whip.

Sounds yummy! Especially like the idea of it lasting a while in the refrigerator. Nice to be able to grab a bite of something already prepared earlier. Thanks for the recipe.

Catherine R - They make all the difference. I find that slicing them is superior to buying them already sliced, mainly for the extra juice that come in the whole olives. Thanks for the comment!

Num! (But as a note.. MSG is bad news.. find a better ingredient to enhance the flavor and you have a major winner and healthier!!) Now I'm hungry.. thanks a lot!!

Sounds simple and easy. Except for the MSG part, I love all the ingredients. Instead of MSG, you can use Chicken Bouillon from Trader's Joes--no MSG and a great taste enhancer.

Chopsticks - oboy! good luck! I'm not sure how that will turn out since it revolves around the olive juice. Thanks for the thumbs up!

Mm mm mm, now that's my kinda pasta salad, minus the msg... allergic! I'll give it a try once the weather warms up again. With a few modifications, mind you, it would be great as a hot entree.
