Ingredients :

  • ¼ cup green onions, minced
  • 2 tbsp reduced-sodium soy sauce
  • 1 tbsp honey
  • 7 cloves garlic, minced
  • 1 tbsp fresh ginger or ½ tsp ground ginger, minced
  • ¼ tsp freshly ground black pepper
  • 2 tsp dark sesame oil (or 2 tsp canola oil plus 1 tsp sesame seeds)
  • 1 small carrot, cut in julienne strips
  • 4 boneless chicken breast halves, skinned

Procedure :

  1. Combine green onions, soy sauce, honey, garlic, ginger and pepper. In large skillet, heat sesame oil. If using oil and sesame seeds, heat until seeds begin to brown.
  2. Add carrot and stir 1-2 minutes over medium heat, then add green onion mixture. Place chicken breast in pan; turn breast once to coat well with marinade before cooking.
  3. Cover. Cook over medium heat until it boils. Reduce heat to low and cook for 20 minutes or until chicken is tender. Serve with rice.

Makes 4 servings.
