Korean Chicken

Ingredients :
- ¼ cup green onions, minced
- 2 tbsp reduced-sodium soy sauce
- 1 tbsp honey
- 7 cloves garlic, minced
- 1 tbsp fresh ginger or ½ tsp ground ginger, minced
- ¼ tsp freshly ground black pepper
- 2 tsp dark sesame oil (or 2 tsp canola oil plus 1 tsp sesame seeds)
- 1 small carrot, cut in julienne strips
- 4 boneless chicken breast halves, skinned
Procedure :
- Combine green onions, soy sauce, honey, garlic, ginger and pepper. In large skillet, heat sesame oil. If using oil and sesame seeds, heat until seeds begin to brown.
- Add carrot and stir 1-2 minutes over medium heat, then add green onion mixture. Place chicken breast in pan; turn breast once to coat well with marinade before cooking.
- Cover. Cook over medium heat until it boils. Reduce heat to low and cook for 20 minutes or until chicken is tender. Serve with rice.
Makes 4 servings.
