Lady's finger curry

 Ingredients:

1) Lady's finger: 3/4 cup

2) Coconut grated: 1 cup

3) Onion: 1 small, chopped

4) Jaggery: 1/2 tsp

5) Tamarind extract: 1/2 tsp

6) Salt: to taste

7) Sambar powder: 2 tsp

8) Chopped coriander leaves: Quarter cup

9) Curry leaves: 5-6

10) Mustard: 1/2 tsp

11) Hing: 1 big pinch

12) Ghee/Oil

 

Method of preparation:

 

1) Heat oil in the pan and fry onions till golden brown in colour.

2) Set it aside to cool. Combine coconut, onion, jaggery, sambar powder, tamarind and coriander in a blender and grind it into a smooth paste.

3) Heat ghee/oil in a thick bottomed pan.

4) Add the mustard, curry leaves and hing.

5) Once it stops spluttering add the ground masala.

6) Cook till fragrant. Now add lady's finger, check salt and serve.
