Lamb with Mint Sauce Recipe

Ingredients

2 lbs lamb chops (aprox 8 pcs)

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup fresh mint leaves, coarsely chopped

1/4 cup brown sugar

2 tablespoons mustard

1/4 cup white wine vinegar

4 tablespoons olive oil


Proceedure

1. Clean lamb chops and pat dry with a paper towel. Season with 1/4 teaspoon of salt and a pinch of pepper. Set aside and let rest.

2. In a saucepan, combine the rest of the salt and pepper, the chopped mint, sugar,mustard,venigar and a tablespoon of olive oil with 1/4 cup of water. bring to a boil for about 2 minutes. Remove from heat and set aside.

3. Heat remaining olive oil in a skillet, once oil is nice and hot you may begin adding the lamb chops. Depending on your taste you can cook for 2 - 3 minutes on each side.

4. Plate cooked chops and serve with the mint sauce
