Allow the flavors time to unfold and fill your mouth. Once you've done that, you can start to pick out the flavors of the wine. Spitting is the preferred method at a tasting when a long flight of wines is being tasted but I prefer to swallow. Whatever you choose, what is left on your tongue is the finish and from that you should be able to discern even more flavors.
