I'm curious about what aspects of religion you would like your children to pick up on. I'm guessing that it's moral behavior and making good choices. Certainly some religions can provide this, but not if the children are simply forces to "go through the motions". Religion, when it is most effective, has to be a personal investment. If the parents do not see religion of worthy of that investment, certainly the children won't either. They follow after their parents examples, whether that is in belief or behavior.
Religion, as it was designed to be, is not a Sunday morning ritual. It is to infuse your entire life. It is to help you make your decisions. It influences your thoughts, your beliefs, your morals, and how you treat others. As such, if parents are aethiest, their decisions and worldview will be based upon the beliefs associated with aethiesm, not a certain religion. Everything they do will first be filtered through this aethiestic view -- how then can their actions be religious? They can't. Children will replicate what they see their parents doing, not what they are saying.
Moreover, there are so many problems that could arrise from this situation. As religious children, do you want them to believe in a creator? A God? A Savior? These are all things you discount as an aethiest or non-religious.
My guess is that you sense there is something lacking that you want to give to your children through religion. If this is the case, why not explore religion a little yourself? The answers are out there. The true God offers them -- why not just do a little digging?

Great hub, thanks for answering my request. My kids are all baptised, Roman Catholic, and we've decided to raise them as such. I was just looking for suggestions on the best ways to do so, since my husband and I are not practicing. Thanks for the suggestions!

We were both raised RC, and a majority of our families are RC as well.
Just wondering, What are the parts of Catholisicm that you want you children to adopt? And why did your husband and you decide to stop practicing.
Well, honestly, we're both aethiests. Raising our childing with religion is something we want to do for our families as well as for our children - when they are older they can make their own decision as to what to believe, as we did. I think we're choosing RC because it's what we grew up with and if they have questions we'll be able to answer them. Also, it makes celebrating the holidays with our families easier, as they will be the same religion.
