Leek Medley

Leeks......the dirty giant green onion. It's that big scallion thing you stand there in the produce section thinking..What the heck is that thing and what do I even do with it? For starters I highly recommend using leeks alot,the bad thing about them is the yield(part you use). Of the whole thing you'll only use about 1/3 of it, the bottom of it is the part to use. The tops, green part, are tough and you could cook it forever and it would still be tough, so you need to cut off the white part and also the root at the very bottom. Now that its trimmed up cut in half lengthwise and rinse off all the dirt. Leeks are notorious for their dirt, they grow up through the ground and get all that dirt stuck in it. I like to slice the leek and then throw it in a collander and rinse them off then put the pieces in a towel and dry them off to use.

Ingredients

  • 1 stick Butter
  • 3 Leeks (cleaned, sliced)
  • 3/4 lb. Button Mushrooms (sliced)
  • 1 Acorn Squash (diced)
  1. Melt butter and add veggies to pan and saute for 5-8 minutes, or until tender.
  2. Serve
