Simple recipe for a tender, melt in your mouth meal


Okay dad, if you’ve read my hub on giving mom some time off, you can take your consideration to a whole other level. After treating mom to a day of pampering, you can really wow her by treating the whole family to dinner in one dish!

This is one of my favorite meals for several reasons…first I’m a typical Irish meat-and-potatoes kind of guy, second, I also enjoy meals where prep is minimal and the yield is huge, third, there is no tending, stirring, basting, blending (work) while cooking, and lastly, clean-up is a snap.

So without further delay, here’s how to make a great family sized dish:

Take a one or two pound cut of London broil, rub the beef lightly with virgin olive oil then sprinkle with a third of dry, well shaken Lipton Onion Soup mix. Roll or rub the soup mix over the beef and place in a crock pot.

Turn the crock pot on medium heat and place the London broil inside (do not cut or tear the beef…it should be left whole). Then add baby carrots, new red potatoes and shake the remaining dry soup mix equally over the dish.

Cover and let cook on medium heat for four hours. After cooking, let stand for a few minutes (five to ten) and serve in dinner bowls.

A great side to this meal is oven warmed French bread. Just before the London broil is done cooking, set your oven for 350F and once warmed, place cuts of French bread on a greased cooking sheet for three minutes. You can brush them with butter, garlic butter or sprinkle with cheese before warming in the oven, the choice is yours.

1 or 2 lb London broil

Package of baby carrots

Package of red new potatoes

Lipton Onion Soup Mix

Virgin olive oil

French bread

Butter (or garlic butter or cheese)
