Low Fat-Low Calorie Peachy Rice Pudding

1 C cooked rice
1/2 C skim milk
1/2 C chopped fresh or frozen peaches
2 egg whites
1 egg
2 TBSP sugar
1 TBSP cornstarch
1 TBSP margerine
1/4 tsp nutmeg
 
Microwave directions:
In a medium microwave-safe bowl, 
combine all ingredients and mix well. 
Microwave on HIGH for 5 to 7 minutes 
until mixture is set, stirring twice during cooking. 
Serve warm. yield 5 1/2 cup servings
